The Alchemist Box is a seasonal, limited edition release offering a unique experience to appreciate the details of exemplary coffee and an exceptional sensory experience. In the second edition we present two outstanding coffees from award winning Colombian farmer Diego Samuel Bermudez of Finca El Paraiso.
Finca El Paraiso is located in the municipality of Piendamo, Corrigimiento de Tunia, Vereda los Arados along the stretch of the Panamerican highway between Popayan and Cali. Its climate is humid with winds from the Pacific. Cherries mature slowly given El Paraiso’s elevation ; this slow maturation helps the concentration of sugars and considerably improves the cup. El Paraiso uses processing technology by a company called Indestec that uses unique Eco-Enigma processing equipment (high tech) to develop consistent profiles in their coffee all year round. Through this Finca El Paraiso is leading the charge in ushering in a new focus on quality and sustainability for specialty coffee on processing as opposed to just terroir; working scientifically to influence flavour, aroma, acidity, and mouthfeel of their coffees.
The Alchemist Box Vol.II features two exceptional Double Anaerobic Fermentation Castillo coffees. Both coffees are fermented for 48 hours, then pulped and fermented once again for 96 hours at 18c. The fermented coffees are washed with a 40c water to create a thermal shock, then another washing round to reach 12c temperature then dry the beans to reach 10-11% moisture.
Pink Melon - Double Anaerobic
A sweet fruit-forward coffee that will capture you from the first sip, with notes of pink honey dew, red grapes and custard body.
Cardamom - Double Anaerobic
Made specifically to simulate Arabic Coffee, with a distinct flavor of cardamom, dates with a juicy body.
